Peanut Porridge
Porridge is my favourite meal of all time to whip up - whether it’s 2 or 30 degrees outside, you can’t go wrong with a huge bowl of warming oats. I’ve been experimenting with different flavours, ingredients and components to try and crack the perfect combination, and unexpectedly this morning after a long yoga flow, this all came together quickly, without giving it too much thought. It’s perfectly peanut-ty (and continues to be why, for this reason, I love crunchy PB) sweet, salty and delicious. Give it a whirl and let me know how it goes!
Ingredients for the oats
(makes enough for 2 hungry humans)
1 cup jumbo rolled oats
2 cups filtered water
1 tablespoon cinnamon
2 tablespoons crunchy peanut butter
(or any nut butter you have sitting around)
1/2 cup raisins
2 pinches of salt
Optional extra drizzle of honey
… For the caramelised banana
1 or 2 ripe bananas
(depending how hungry you are)
1 tablespoon honey
3 tablespoons filtered water
1 teaspoon cinnamon
& extra optional toppings
Cold, crisp sliced apple
Extra cinnamon to dust
granola, chia/pumpkin/sunflower seeds, extra fruit etc.
How-To
Combine all the ingredients for the oats, except peanut butter. It will seem pretty watery at first, but I promise this will soak up to create beautiful creamy oats.
Once your mixture is looking a little wet, but much more edible, stir through as much PB as you’d like. I ended up adding a little over a tablespoon, for that extra crunch.
Don’t forget to add the salt, too, as this intensifies the peanut flavour even more.
At the same time, slice your banana into 5mm disks.
In a separate pan, heat the honey and water until they begin to bubble.
Add the banana to this sugary mix, and as it starts to reduce and caramelise, sprinkle in a little cinnamon to encourage the browning and softening of the edges.
You can carefully flip the banana to coat both sides, or I just ended up mixing them around a little to ensure a lovely even coating.
Remove from the heat once soft.
Serve your porridge in bowls (or on plates for Scandi vibes,) topped with the caramelised banana and apple slices.
With a little extra sprinkle of cinnamon for sweetness, tuck in and enjoy!
